If left to ripen fully, the starfruit change to a bright yellow colour and soften. Once ripe, the starfruit have a sweeter flavour and are then best either juiced or eaten raw out of hand. We usually dispatch the starfruit when they are green and firm to ensure the fruit gets to you in good condition.
