Arborio rice is short-grain rice from Italy. The rounded grains are firm, creamy, and chewy when cooked, compared to other rice kinds. It has a starchy flavour that complements other flavours well. Arborio rice is commonly used in risotto, although other kinds such as Carnaroli, Maratelli, Baldo, and Vialone Nano are also suited. Rice pudding is commonly made using arborio rice. Arborio rice can also be used to make sweet rice pudding or in a Paella in place of Spanish rice. Although it has more starch than regular long-grain white rice, this does not mean it has more carbohydrates. The grain has wonderful, creamy skin and is firm inside when cooked to perfection.
