We have a small holding near Ashford,Kent where we keep bees as an amateur beekeepers. Our honey is straight from the hive,raw without any other processing involved as nature intended. We only let it go through strainer to remove things like beeswax pieces or big pollen grains bees may have dropped and it got stuck to the honeycomb. It is wildflower honey(mix of different flowers depending on what bees can find and bring back to the hive) so every batch will taste slightly differently depending on what is in flower at the time of picking. It is natural product it will crystallise over time. It is normal proces and honey is still perfectly ok and it's not loosing any of its goodness.
