The usual amount used in pork sausage is 10% with water at 15% of the total weight. Normally you would add 1.5Kg of water per 1Kg of Rusk. With this Rusk the mixture can be as high as 2 Kilos of water per Kg of Rusk, giving you a higher product yield.
