These are 'Single Pole Double Throw' (SPDT) toggle switches. They have three electrical 'pins', the middle one being the 'pole' and the other two being the 'throws'. This particular switch type (MTS-123) is referred to as ON-OFF-ON as it has has three lever positions, where the centre position of the toggle lever is an 'Off' position where the 'pole' is not connected to either of the 'throws'.
