Floral & Fruity<br/>Today the Dragon (in Welsh, Y Ddraig) is the proud national flag of Wales. This fiery creature is close to our hearts. It is thought that the ancient Welsh kings were using the dragon as a royal emblem by the early 5th century AD. In this they followed Roman cohorts that carried hollow metal 'draco' standards, through which the wind howled, to instill fear in their foes.<br/><br/>The Making of Legend<br/>Our unique copper stills are charged with a fermented barley 'wash'. This is distilled to produce a flavourful spirit of extraordinary strength and purity which is married with water from the Brecon Beacons before maturing in the finest oak casks.<br/>Penderyn Legend is matured in specially reserved ex-bourbon casks made from American Oak, before receiving a further maturation in oak barriques that have previously held Madeira wine, to develop a harmonious single malt whisky with a subtle but sophisticated character and soft golden hues.<br/>This great all-rounder is the essential expression of the legendary Penderyn house style and has all the richness of flavour and fruitiness that Penderyn is famous for world-wide.<br/><br/>Tasting Notes<br/>Aromas of fresh apples and citrus fruits intermingle with cream fudge and sultana raisins in the nose to create a complex yet fresh, clean and well-balanced whisky. In the mouth this single malt whisky is incredibly smooth, and both fresh and rich dried fruits abound. Jameson Caskmates Stout Edition is a smooth Irish whiskey, finished in Stout craft beer barrels. We've been distilling Jameson since 1780 but we're always open to new ideas. So, when a local craft brewer borrowed our casks to age their fine Irish stout, it gave us an idea; why not finish our own Jameson in the stout-seasoned oak barrels? The trademark smoothness of triple distilled Jameson Original, with additional rich flavours of coffee and cocoa from the beer cask finish. Best enjoyed neat, paired with a craft beer or in an Irish coffee.<br/><br/>Tasting Notes<br/>Colour: Light gold. <br/>Nose: Freshly cut hay, green apples and pears, with a twist of lime zest. Mild spices appear, green tea & hazelnut and milk chocolate.<br/>Taste: The initial sweet mouth coating typical of the Irish pot still whiskey, quickly complemented by the subtle touch of hops and cocoa beans from the beer cask finish. <br/>Finish: Long and sweet with milk chocolate and butterscotch.<br/><br/>Jameson Caskmates Stout Edition was a finalist in the Ultimate Spirits Challenge 2019, and also received a gold medal in both the San Francisco World Spirit Competition & International Spirit Challenge.
